Ingredients.
- 3 medium potatoes
- 1 tablespoon lemon juice
- 1/2 teaspoon paprika
- 1/2 teaspoon chilli flakes
- 2 cloves garlic
- 1/2 cup coriander leaf
- Salt and olive oil
Method.
Heat the oven to 200C / 390F.
Cut the potatoes into small cubes, parboil in a saucepan for 5 minutes. Drain the potato, place them on a baking tray. Coat the potatoes with a little olive oil and bake in the oven for 30 minutes.
When the potatoes are ready remove them from the oven and put them in a hot frypan with a little olive oil. After a minute add the lemon juice and garlic to frypan. Sprinkle the paprika and chilli flakes over the potatoes. Cook for 3 minutes.
Chop the coriander leaf, stir in and serve.
